Tagatose,also called D-tagatose,It is a ketohexose,is produced commercially from galactose,then isomerized into tagatose.Its sweetness is roughly 90-92% as sweet as sucrose, with a clean, sugar-like taste and little aftertaste,but its heat produced is 1.5 kcal/g that only one-third that of sucrose.
